Understanding the Côte des Blancs – it’s all about the chalk……

In La Champagne, the Côte des Blancs region speaks of all things white; the pure snowy white Cretaceous chalk subsoils and the white chardonnay grapes that grow upon it to yield Blanc de Blanc champagnes of exquisite minerality, finesse and aging potential of the chardonnay grape.

Yet within this short 20km escarpment of prized chalk, villages display their own characteristics and give rise to a plethora of Blanc de Blanc styles ranging from austere, mineral laden wines bursting with mouth-watering salinity, to those flaunting more tropical, rich, fragrant white floral notes.

Join us for Chapters 10 & 11 of The Champagne Chronicles as we undertake an in-depth exploration of six of the greatest Côte des Blancs villages, and attempt to unravel the hallmarks of these classic sites.

Hosted by Tracy Mann, these chapters will include rare cuvées from new and exciting producers alongside some of the legendary names in Champagne. If you love Blanc de Blancs, these are two Chapters not to be missed.

Into The Inferno – Part 2 Lava

After her many years of study, tasting wines from all over the world, Foni Pollitt discovered a common thread that runs between her favourite bottles. They all display a distinct integrity, grittiness and lack of pretension, and were sourced from vineyards planted in rich volcanic soils.

To honour this deliciously elusive style, Foni has been curating a series of intimate dinners dedicated to Volcanic Wines from around the globe. The second instalment Lava will be held on Wednesday August 31st, where you’ll jump Into The Inferno, discovering the alchemy behind these highly distinctive wines from Italy & Santorini. With special guest Foni’s mum cooking a Sicilian feast to match!

No matter which pocket of the world they are found in, volcanic soils are renowned for producing some of the world’s most flavoursome plants, including the most prized coffee shrubs and of course, amazing grapes. These vineyards are often home to rare and ancient varietals with a presence and vitality that evade description. Foni will be pouring some exceptional examples displaying to give you a true understanding of this charismatic category.

Make Your Own Gin

Join us for one of the most unique gin masterclasses Perth has to offer! Our monthly ‘Make Your Own Gin’ class allows you to produce your very own bespoke Gin, whilst delving into the unique world of flavours and botanicals. During the class, not only will you learn about the different varieties of gin, but you will 
get to taste a selection from around the world and learn how to make your very own 
gin at home! A good party trick to add to the collection!

Classes are around 1 1/2 – 2 hours long including share plates, a jar of your freshly created gin and a whole lot of fun! Our classes are very popular & sell out almost straight away, so we also give people the option of booking a private gin class at a time that suits them! Minimum of 10 guests per class, maximum of 16.
